SUMMARY
Food Demand models include quantity of the good explained by its price,
the price of substitutes, average income and in specific cases dummy variables
to quantify seasonality or transitory events. Research studies conducted in the
country used pork, mutton, a basket of other food items and most recently
chicken as substitutes. Most of them were not conclusive because of
autocorrelation or lack of significance of partial regression coefficients. The
purpose of this paper was to estimate a demand function by means of Ordinary
Least Squares and direct and cross price elasticities. Beef price, chicken price
and the price of a basket of alternative goods were used as explanatory
variables. The significance of beef price, chicken price and inflation was
proven. The average income and the price of a basket of alternative goods
resulted not significant. The goodness of fit of the model was good and there
was no evidence of autocorrelation, heteroskedasticity, and muticollinearity.
Chicken resulted a beef substitute. The fact that income resulted not
significant opens an inquiry about the method government agencies use for its
estimation or a peculiar behaviour of argentine consumers.
